When I think of "convenience" baby food, I don't think of jars... I think of sweet potato! After all, what could be easier than popping one in the oven (you don't even need to peel it!) and baking it for about an hour - then slicing it open and scooping out the soft flesh? Its texture is so perfect for babies, it doesn't even need mashing - and, of course, the sweet taste makes it appealing to even the pickiest eater!
Sweet potatoes, which can be found with either orange, red, yellow, purple or white skins, are very nutritious and are rich sources of beta-carotene (vitamin A), vitamin C and manganese. They also provide your baby with fiber, vitamin B6, iron and potassium.
They are ideal for use as a "first food" from 6 months of age and can also be offered as a first finger food. Simply peel a cooled, baked sweet potato, then cut into cubes. Sprinkle with cinnamon and offer to your baby - nature's delicious "fast food"!
This recipe for "Chicken and Sweet Potato Mash" is VERY quick and easy and is suitable for babies from 7 months.

1/4 cup cooked boneless chicken, cubed 1 sweet potato, peeled and cubed 1 medium carrot, peeled and cubed 2tbsp grated cheddar cheese 1/2 tsp chopped fresh chives
Steam the sweet potato and carrot cubes until tender
Drain well, then add the cheese and stir until the cheese has melted.
Stir in the chicken, then puree or mash to the ideal texture for your baby.
